Toughness can mean different things to different people.
I have nothing but respect for any athlete that dedicates themselves to their craft. It takes a high level of determination, mental toughness and discipline not many would attempt,
I am in awe of NASCAR drivers. 500 miles races, inches apart from your competitors at high speed.

Here on a horse racing site, I thought Jockey's would at least get an honorable mention.

Most people don't equate to having to maintain a high level of extreme mental alertness for an extended period of time as requiring toughness. I am a big Nascar fan and understand it is both physically and mentally challenging, but no one is sitting in the passenger seat hitting them while they are trying to drive.

Conor McGregor found out when he stepped into someone else's domain how difficult it is. Would the outcome still be the same if Floyd Mayweather stepped into the octagon?

Of course McGregor-Mayweather would have flipped if it was MMA, due to Mayweather's style and skills, but there could be some brawling club fighter type lower ranked in boxing that could convert to MMA with some success.

Jump Jockey
How many sports have an ambulance that follows the competitors round? Sometimes more than six races a day, travelling all over the country, regularly taking falls from horses jumping fences up to 5ft high at 30mph. All the time having to eat very little to keep weight down. Serious injuries commonplace and deaths occur. Tony McCoy was our champion jump jockey for an amazing 20 years on the trot. Here is a graphic which shows just some of the injuries he suffered in that time.

I'm amazed that an NFL player isn't completely blowing this thing away.
I mean..., really?
Maybe I posed the question incorrectly.
What athlete would you least like to get into a fight with in the back alley of a bar?

True.
Once he gets his hands on you, it is all over. A boxer can pepper you with shots, but a wrestler will make you hurt for as long a time till the cops show up.
Old roommate was a 3 time State Champ wrestler. I'd scrap with him quite a bit. I never won.

In my life, I've had friends who have called themselves "experts" in all sorts of fighting "arts". Karate...Kung Fu...Jiu Jitsu...boxing...EVERYTHING. But when the going got tough, and we needed someone to stand by our side...we all called Dino S...a state champ wrestler with a vice-like grip that you could never hope to escape from. He is now 58 years old...and I still pity the fool who would ever square up against him.
When you see a square-built guy with a cauliflower ear...don't mess with him.

I definitely wouldn't want to be merging onto a highway if Irad Ortiz were driving up the right lane.

Ha. Another belly laugh.
Never. Ever. In your life, mess with a cauliflower ear guy. He won't kick your ass, he'll just make you really really hurt. And that is if he is nice.

I'm a hockey geek. The regular season isn't easy on those guys but when it comes to the playoffs. Every other day of intense pounding, pressure, sticks, pucks. Boards with no give in them, it's like getting buried into a cement wall.
Shift after shift. I respect most of those sports listed. I'm voting hockey.
